Taro Bread


This time, it's a project that I did with Bosch MUM2. 


By giving new life to leftover food ^^.
And my menu is Taro bread. A bread that is made with Chinese style sweetened taro that my mom left in the refrigerator, haha.



So, you don't have to use the same filling, other kinds of sweetened bean paste will be OK too.

Taro Bread
makes 9


Taro bread
300 g ...................... Bread Flour
30  g ....................... Granulated sugar
4.5 g ....................... Instant yeast
4.5 g ....................... Salt
60 g ........................ Water
120 g ...................... Milk
40 g ........................ Egg
30 g ......................... Unsalted butter
315 g ........................ Sweetened taro (you can use sweetened bean paste) 

Egg wash
2 tsp ......................... Egg 
1 tsp ......................... Milk





Put the bread flour, sugar, and instant yeast into a bowl of a stand mixer. Mix at low speed to combine. Mix in the salt at low speed.


Pour the milk, egg, and water into the bowl.


Knead at medium high speed (for Bosch MUM2, I use speed 3). Knead for 9-10 minutes.


Add the butter and knead at medium high speed (for Bosch MUM2, I use speed 3). Knead for 4 minutes.


Remove from the bowl. 


Form the dough into a ball. Brush a bowl with unsalted butter, place the dough into the pan, and cover with plastic.


Let it rise for 1 hour.


Cut into 9 equal pieces.


Roll each piece into a ball.


Rest before shaping for 15 minutes.


Divide the filling into 9 (35 g/ piece) roll into a cylinder (Using plastic wrap).


Pat and roll the dough.


Into an oval shape about 15 x 8 cm.


Place the filling onto the center.


Cover and tightly seal the filling.


Roll the dough into 20 cm. long.


Roll the dough with a rolling pin. 


Try not to roll the end of the dough too much.


Cut 4 long strips in the center of the dough.


Roll the dough diagonally from the front.


Tie the dough. Pull the end of the dough out of the hole to keep its shape.
 

Cover and let it rise for  30-40 minutes.


Before baking preheat an oven to 200℃


Mix the egg and milk together.
Brush the top of the dough with egg wash (egg and milk mixture).


Bake in 200℃  Preheated oven for 15 minutes.


Let the bread cool completely before serving.
