Moist Apple cake

I always have apples in the fridge.

For me, it's one of the best fruits ^^.
As it lasts very long in the fridge, easy to eat and you can turn it into many menus both sweet and savory.

One of the menus that I make very often is apple cake (there are many recipes for apple cake in my blog). 

This time is moist apple cake. That used the sponge method for making the batter, and it's very easy if you use a stand mixer. Anyway, you can use a hand mixer too, but if using the hand mixer, please fold the flour and melted butter with a spatula instead of beating it.
With a lot of butter and apples, you will get a very moist cake. I cook the apples in the microwave before using them but you can skip this step if you want the apple to be firm.

Make 24 cm cake



Apple
500 g ................ Apple (cored and sliced)
20 g .................. Granulated sugar

Cake batter
100 g ................. Unsalted butter
160 g ................. Cake flour
4 ....................... Eggs (240-250 g)
150 g ................. Granulated sugar
........................... Pinch of salt




Preheat an oven to 180℃
Brush a 24 cm. round pan with butter.


Melt the butter in the microwave and let it cool before using it.


Put the apple and sugar (20g) into a bowl.
Cover and microwave at 600 w for 5 minutes.


Let it cool completely before using.


Sift the cake flour and set it aside before using it.


Put the egg into the bowl of the stand mixer attached with twin beater whip (I use Bosch Universal plus 1000w at speed 3). Add the salt and sugar gradually.


After adding all the sugar, whip for 6 minutes (speed 3).
After 6 minutes, decrease the speed to speed 2, and whip for 2 minutes more.


Decrease the speed to the lowest (speed 1), add the sifted flour gradually.


After adding all the flour, add the melted butter gradually.


After all the melted butter is mixed, stop the mixer.


Put half of the apple mixture into the prepared pan.


Pour the cake batter into the pan.


Put the rest of the apple mixture into the pan.
Bake in 180℃  Preheated oven for 35-40 minutes.


Remove from the oven and let the cake cool completely on a wire rack.
