Don’t let the name of this recipe fool you. These are party potatoes but they can be served anytime. Party potatoes make a great snack or side dish for your dinner. The bacon blue cheese dip can also be made to be served with veggies or potato chips too.This recipe for party potatoes with bacon blue cheese dip is super easy to make. I use the Little Potato Company Boomer Gold Potatoes but you can use any small potato of your choice. These party potatoes with bacon blue cheese dip can be served hot or cold. The Ingredients For The Party Potatoes With Blue Cheese Bacon Dip
The ingredients are listed in the printable recipe. I use the pre-cooked bacon in the pouch but fresh cooked bacon is a good addition too. I included measurements in the printable recipe but if you would like more bacon feel free to add as much or as little as you want. The other ingredient I include in the recipe is blue cheese. If you are not a fan of blue cheese you can substitute sharp cheddar, or any cheese you prefer. The cheese is the same as the bacon, feel free to add as little or as much as you like. I choose a super rich and salty blue cheese for this dip. If you use a very salty cheese, be sure to adjust how much salt you use on the potatoes so that your recipe isn’t overly salty.

I bought all the ingredients for this recipe at Aldi. The cost of all of these ingredients was about $12. These ingredients are available at all grocery stores. If you do shop at Aldi, you can find the bacon and the ranch by the salad dressing and I chose the $3.99 bacon.

Party Potatoes With Bacon Blue Cheese Dip
An appetizer of side dish made with crispy, smashed baby potatoes and a sour cream based dip with bacon, blue cheese and green onion. Easy to make and delicious. You can leave out the bacon to make it a vegetarian recipe.
Ingredients
1 bag of The Little Potato Company Baby Boomer Yellow Potatoes, 1.5 lb
1/2 Stick of Melted Butter
1 Pouch of Ranch Salad Dressing Mix
1 2.5 oz Package of Cooked Bacon Crumbles
4 Green Onions, White & Green Parts, Sliced
1/4 C of Blue Cheese, Crumbled (you can sub shredded sharp cheddar)
Salt
Pepper
Onion Powder
Garlic Powder
Instructions
Add your potatoes to 6 cups of water and add a couple of teaspoons of salt in a pot. Bring to a boil and let cook for about 12 minutes. You want the potatoes to be soft, but not falling apart.
Drain the potatoes and spread on a cookie sheet sprayed with non-stick spray.
Use something to smash each potato into a flat patty. I used a meat tenderizer but you can use a fork or the bottom of a glass. You want to flatten it but try to keep it intact.
Brush all of the potatoes with the melted butter and season with salt, pepper, garlic powder and onion powder to taste.
Bake in a 400 degree oven for 45 minutes. Flip half way through and brush the other side with butter.
While the potatoes bake, mix the bacon, blue cheese and green onions with the sour cream and ranch pouch. You can reserve a little of the bacon and green onions to garnish the top of the dip.
When the potatoes are done, let them cool on the pan. Serve the potato chips with the dip for a great snack or side dish.
