Sourdough Waffles

Today, it's a sourdough bread that doesn't rely on the natural yeast from sourdough starter only.

As you can see that there is a small amount of yeast on the ingredient list.
You may want to ask "why do we need yeast when we have the sourdough starter?". 
It's because, this time main role of the sourdough starter is adding the flavor, not for rising the bread. Your waffle will get the benefit from the lovely sour taste, and fragrance of the starter. 
With only 1 g of yeast, the waffle will rise perfectly, and you can plan the timeline easily too. 
I think it's one of the best ways of using the sourdough starter, as you can get more complex flavor bread without worrying much about the rising time.
You can see from the recipe that after kneading, you need to rise the dough at room temperature for only 30 minutes. After that, your dough will rise slowly in the fridge, plus it allows the butter to melt into the flour and set beautifully. The next day, your dough will be easier to handle and need only 30 minutes for rising before putting it in the waffle iron!
 If you want you can add waffle sugar for extra sweetness, or you can enjoy the plain one that's rich, delicious, and fragrance from the butter and sourdough starter.



Sourdough Waffles
Makes 8 waffles


Sourdough starter
50 g ............... Sourdough starter
50 g ............... Whole-wheat flour
50 g ............... Water

Sourdough Waffles
150 g ............... Sourdough starter
90 g ................ Unsalted butter
200 g ............. Bread Flour
25 g ................ Granulated sugar
1 g ................... Instant yeast 
5 g ................... Salt
50 g ................. Milk
2 ...................... Eggs

Extra
......................... Butter for brushing a waffle iron
......................... Waffle sugar (optional)





Mix the 50 g of Sourdough starter with whole-wheat flour and water.

Let it rises in room temperature (22-30℃)overnight (at least 12 hours )



Melt the butter in a microwave, and let it cool completely before using it.


Put the bread flour, sugar, salt, and instant yeast into a bowl, and mix to combine.
Add the Sourdough starter, milk, and egg into the bowl.


Mix to combine.


Remove from the bowl, and knead for 5 minutes.


Gradually knead the melted butter into the dough.


And knead until smooth (about 5-7 minutes).


Put it in a bowl, and let it rest for 30 minutes.


Then, let it rises in a refrigerator overnight (at least 5 hours but not longer than 24 hours).


When the dough is ready, cut it into 8 pieces.


And roll each piece into a ball. 


If you want to add waffle sugar, you can add it at this stage.


Let it rises for 30 minutes.


Brush warmed waffle iron with butter.


Place the waffle dough into the waffle iron, and cook it.

Until golden brown.

Serve and enjoy!!!!
